Gingerbread Cookies

    This dough will hold its shape when baking which makes it great for cutting out gingerbread men. Roll it extra thick and your cookie will be soft and chewy. You can also roll into truffle sized balls, press them into sugar and flatten them slightly on the baking tray. The result is a perfectly chewy crinkle cookie. Ingredients
425g flour
¾ tsp baking soda
1 tbsp cinnamon
1 tbsp ground ginger
½ tsp ground cloves
½ tsp salt
170g butter, room temp
160g packed dark brown sugar
250g molasses
2 tbsp milk

Instructions
Mix together the dry ingredients.

Add the butter and beat until you get a sandy mixture. Then add the molasses and milk and continute to beat until just combined.

Divide the dough, flatten into disks, wrap in plastic and age in the refrigerator overnight or for at least two hours.

When ready to bake, preheat your oven to 350°F or 180°C. Roll out the dough and cut out your desired shapes. Bake for just 7-9 minutes. They will come out very soft.
