Cut-Out
Chocolate Cookies

    This dough will hold its shape when baking which makes it ideal for cutting out shapes. For extra insurance, leave the cut out cookies in the freezer for a few minutes before baking. These turn out soft and deep in chocolate flavor. 
Ingredients
185g butter room temp
200g sugar
1 large egg room temp
1tsp vanilla extract
200g flour
90g cocoa powder
1/8tsp salt 
70g of finely chopped
chocolate (optional)
Instructions
Beat the butter until creamy, add sugar and continue to beat.

Add the egg and vanilla and beat a bit longer. 

In a separate bowl, whisk together the dry ingredients and slowly incorprate them to the wet ingredients. Mix on low just until combined. 

Divide and flatten the dough into two disks, wrap in plastic and age in the refrigerator for at least 2 hours and up to 5 days.

When ready to bake, preheat your oven to 350°F or 180°C. Remove the dough from the fridge so it begins to reach room temperature (you want it to be a bit cold when rolling). Roll thick, cut out shapes and  bake for 10-12 minutes.
