Tomatillo Salsa

   This recipe was given to us by Marisa, friend and contributor, who recommends using the salsa for enchiladas or chilaquiles. Make sure to remove most of the chiles’ seeds if you prefer a mild salsa. 
10 tomatillos (canned or fresh)
2 garlic cloves chopped
1/2 onion sliced
7 small chile de árbol stemmed
salt to taste
Sauté the onions, garlic and chiles in a sauce pan with olive oil. Add a pinch of salt and stir. Allow to cook for just a few minutes then remove from heat.

Boil the tomatillos for 10-15 minutes in water until cooked. Remove from heat and allow to cool for a bit.

Blend all of your ingredients until you reach your desired consistency. Add water if needed. Simmer the salsa in a sauce pan over low heat for 10 minutes. Salt to taste.
