    In Ahetze, Basque Country. We found it on the road from St. Jean de Luz to Biarritz. The most exquisite Gateaux Basques. It is advised to call ahead to place an order, although the owner, Cecile, will sometimes have a few Gateaux Basques available on demand. Cash or check only. Order the blackberry or apricot filled. Cream is good too but I personally like the acidity in the jam flavored ones. The exterior is a buttery crispy shell, and the interior tastes like pancakes. Eat warm and with a spoonfull of crème fraîche or room temperature. Store countertop.
