Sofi’s Kale Salad

For the dressing:
1/4 cup olive oil
2 tbsp Dijon mustard
2 tbsp lemon juice
2 tbsp freshly squeezed blood orange juice
2 tbsp honey
2 tbsp apple cider vinegar
1 tsp crushed garlic
Salt and pepper to taste

For the salad:
2 cups of chopped kale leaves
+ 1/2 tbsp avocado or neutral flavored oil
2 whole sweet potatoes, diced
A handful of golden raisins
A handful of Pecans  
Thinly sliced red onion to taste
Roast the diced sweet potatoes until golden brown then set aside to cool.

Chop and massage the kale with avocado oil (purchase the entire kale leaves and chop them yourself, they taste better and it’s easier to take the thick stem off). Sprinkle with salt, toss and set aside. Whisk together the dressing ingredients and pour over the chopped kale.

Add the pecans, sliced red onion, raisins, sweet potato and toss together.
