Flourless Chocolate Cake

Ingredients
170g bittersweet chocolate, chopped
113g butter
150g sugar
1 shot of strong espresso
3 eggs
43g cocoa powder
For the ganache

Method
Melt the chocolate in a water bath. Add the butter and stir while still warm.
Remove from heat and beat in the sugar and eggs. Add the espresso and cocoa powder and continue to mix until combined.
Pour batter in a round cake pan lined with parchment paper or greased. Bake for about 25 minutes at 350F or 180C.
For the ganache, melt the chopped chocolate in a water bath, add the heavy cream and mix with a wooden spoon. Add the espresso. Let reach room temperature before spreading on cake.
